    • 1.4 USES AS OIL

      There is a global search for alternative source of fuel which should be cheaper, safer and more importantly, environmentally friendly in comparison with widely used burning fuels. Since the tubers of C. esculentus contain 20-36% oil, it has been suggested as potential oil crop for the production of biodiesel (Zhang et al., 2012).

       1.4.1 USES IN MEDICINE AND COSMETIC INDUSTRY

      As a source of oil, the tubers were used in pharmacy under the altin name ‘bulbuli thrasi ‘ begginingno letter than end 18th century (Pharmacopoea, 1824). In ayurvedic medicine, tigernut are used in the treatment of flatulence, diarrhea, dysentery, debity and indigestion (Abano and Amoah, 2011). Tigernut oil corn is used in the cosmetic industry. As it is antidioxidant 9 because of its high content of vitamin E) it helps slow down the ageing of the body cells. It favour the elasticity of the skin and reduces skin wrinkles.       1.5 STORAGE

      Tiger nut loses a considerable amount of water during drying and storage. The starch content of the tiger nut tuber decreases and the reducing sugar (invert sugar) content increases during storage. Tiger nut can be stored, dry and rehydrate by soaking without losing the crisp texture. Soaking is usually an overnight operation and is importance in the processes for some food such as legumes and some vegetables and grains since it reduces the time necessary to reach the required texture during cooking. 

      A common characteristic of dried tigernut is a hard texture and low moisture content. Therefore, soaking is indispensable to render them edible with ease and to ensure capable sensory quality (Factsheets for Crprus esculentus L., 2003).

      1.6 SIDE EFFECT OF EATING TIGERNUT.

      Due to the presence of anti-nutritional compounds such as phytates and oxalates in tiger nut; these anti-nutrients have specific effects on the body. Phytates may result in reduction of calcium and iron absorption, while oxalate could result in reduction of calcium formation and also, encouraging kidney formation (Montinez, V 2003).
